{February} Cinnamon Butter Popcorn

February has gotten away from me! It's a good thing it's a leap year. I needed that extra day-- anyone else?!

I'm constantly feeling like I am super busy and won't be able to accomplish all the things I've signed myself up for and yet so bored I want to poke my own eye out. It's such a weird place to be in. I'm not entirely sure if it's because I'm on mat leave but I can only imagine it will get worse as soon as I add in a job and, and, and...

I can barely keep up with one new popcorn recipe a month. But I mean, who is pressuring me to make them up? No one really, except me. Classic over achiever over here!

I've been thinking about this recipe all month, and I've made it several times BUT tonight was by far the best and I wrote down all my measurements (which doesn't happen that often).

So here you have it, just in time for The Bachelor because we know that snacks and girl talk are what makes watching it so much better.

Cinnamon Butter Popcorn

3/4 popcorn kernels

1 T coconut oil

1 T + 1/2 t brown/raw sugar

2 T butter

1/2 t cinnamon

Place the popcorn, 1 tablespoon coconut oil and 1 tablespoon sugar into the whirley pop and heat on medium high until all kernels are popped. Melt 2 tablespoons of butter and mix in 1/2 teaspoon of cinnamon and 1/2 teaspoon sugar. Drizzle over popcorn and enjoy! 

* You don't really need the drizzle but I mean, butter. Sometimes I've just left the drizzle off and added a little salt onto the popped popcorn-- delish!
