-- curried cauliflower bites

My hubs is working his tail off in Calgary for the next 2 weeks. It's been a solid 4 days and I'm not going to lie, I've already started a countdown for when he returns. Currently we're at 10 more sleeps. While he's away though, I decided to try going vegan. I'm not entirely sure why but partly it's because I can and partly it's because I'm in love with my Oh She Glows cookbook. This recipe however is straight from Chef Coco herself (that's me). I always forget about how easy and delicious these are but I'll be honest, my house smelled like curry for a couple days. #worthit


Curried Cauliflower Bites

1 head of Cauliflower

2-3 T Olive Oil

1 1/2 t Curry Powder

1/2 t Tumeric

1 t Cumin

S+P to taste

Preheat your oven to 375F. Break up the cauliflower into sections, I usually do 4 because it's easier to slice that way. Slice each section thinly, making bite sized pieces. The thiner the better, it makes them extra crispy. Parts of the cauliflower will flake off but use them anyway. Add the slices/pieces to a bowl and add all other ingredients. Toss to coat evenly and lay them flat on a baking sheet. Bake for 30-40 minutes, until nice and brown. 


These are super tasty and make a really nice snack or side dish. I would also eat them cold, and I may or may not have eaten 3/4 of the cauliflower myself.
